When I prepare meals like chili, I often end up with a large quantity. Instead of my family eating the same thing for four days straight, I freeze a portion for later.

Then, when a busy day comes around—whether it’s a week later or even a month—I’m so grateful to have that container ready to go.

If I have hot dogs, we make chili dogs. If I have Fritos and sour cream, it turns into Frito pie. And if groceries are low, we just heat it up with cheese and call it dinner.

As a busy mom, I’ve had plenty of moments where I had no idea what to make—but now, with a few meals tucked away in the freezer, I can avoid takeout and reduce food waste in a way that actually works for me.

One of the meals in my freezer is this hidden veggie chili (and I included a free printable recipe at the end of this post ).

What You Need to Get Started

You don’t need anything fancy to start stocking your freezer with easy future meals.

Here’s what I use:

  • Freezer-safe deli containers (my favorite are the 32 oz containers)

  • Painter’s tape

  • Permanent marker

That’s it—simple, affordable, and easy to reuse.

I personally love painter’s tape because it sticks well in the freezer but peels off cleanly without leaving sticky residue behind. It makes reusing containers quick and easy.

Let’s Talk Chili

Let’s kick things off with the chili you see stored in my freezer. This dish is a family favorite and one of the easiest meals to freeze and reuse in different ways.

At the end of this post, I included a printable recipe card for this hidden veggie chili so you can save it for later or add it to your own freezer meal rotation.

Once your pot of chili is ready, you have a couple options.

Option 1: Eat Some, Freeze Some

We usually have chili for dinner the same night I make it. For our family of three, I still normally have enough left for two 32 oz containers afterward.

I keep one in the fridge for leftovers the next day and freeze the second container for later.

That future container has saved dinner more times than I can count.

Option 2: Prep Ahead for Busy Seasons

If I know life is about to get extra busy—whether it’s postpartum recovery, sports schedules, appointments, or just an overwhelming week—I’ll divide the entire batch into about three containers and freeze them all.

That gives me multiple future dinners ready to go without extra work later.

Handy Tips for Freezing Meals

Here are a few things that help me when freezing meals:

  • Leave about an inch of space at the top of the container since food expands as it freezes.

  • Always make sure your containers are labeled freezer safe.

  • Keep things simple—you don’t need a perfect Pinterest pantry to make this work.

Simple systems are easier to stick with long term.

My Labeling System (and Why It Matters)

You might wonder why labeling every container matters so much, but if you’ve ever dug through a freezer searching for one thing and pulled out five wrong containers first… you already know why.

I keep my labeling system super simple:

  • Painter’s tape

  • Permanent marker

  • Label on the lid

I specifically label the tops instead of the sides because when you’re looking down into a freezer, you can quickly grab what you need without digging around.

This is especially helpful if you have:

  • A deep freezer

  • Frozen fruit

  • Pizza

  • Meat

  • Multiple meal containers stacked together

Being able to open the freezer, grab dinner quickly, and shut the door again makes busy evenings run so much smoother.

It also saves you from trying to explain over the phone:

“No, not THAT container… the OTHER one.”

A Note on Reheating

My favorite way to reheat freezer meals is in the crockpot.

When the food is frozen in deli containers, I let it sit on the counter for a few minutes until it loosens enough to slide out. Then I place it directly into the crockpot on low.

Once it warms enough to stir, I switch it over to the warm setting until we’re ready to eat.

I love this method because:

  • There are very few dishes

  • I don’t have to wait on the oven

  • Dinner is ready whenever we are

On chaotic days, that convenience makes a huge difference.

It’s not perfect, but it works—and right now, that’s more than enough for me.
